Fatayer
Ingredients: 220g strong white flour
half tea spoon sea salt
half tea spoon dried east
100 ml tepid water
2 tea spoons olive oil
Filling
800g pumkin,peeled,seeded and chopped into 5 cm square chunks
half garlic clove crashed
1 table spoon olive oil
80g feta cheese,crumbled and mixed with half small bunch fresh oregano chopped
1 table spoon toasted pinenuts
salt,peppers.
Meathod;
to make the fatayer dough place the flour and salt in a large bowl .Dissolve the yeast in the water and then pour the oil into the water. .now pour the water into flour a bit at a time while mixing.when all the water is added transfer to a floured surface and knead well.If the dough still sticky add a little more flour.
To start filling toss the pumking,garlic,salt,peppers,olive oil bake in the oven for 25 minutes or until soft.then make puree. now divide the dough four roll balls. using a rolling pin gently roll each ball to 5mm thick .put table spoon of the pumkin filling in the middle of each circle shape it triangle and put a quarter of the feta and pinenuts on top.moisten the of the circle with a little water then lift the dough into centre around the traiangle of pumkin.with your fingers gently squeeze the adjoining edge together until sealed.Now bake for 10-15 minutes in the pre-heat oven.serve with rocket salad,pinenuts,dehydrates beet root,house dressing as a presentation.
